BaBin 5YO Rum – ex-Pineau des Charentes Cask is a limited-release aged rum from BaBin Rum Reserve and No8 Distillery in Dunedin. Aged for five years, the expression brings together BaBin’s New Zealand rum-making approach with the distinctive influence of a cask previously used for Pineau des Charentes.
The French cask influence adds roundness and depth to the aged rum while complementing its underlying molasses and oak character. Aromas of dried apricot, raisin, honey, oak and vanilla introduce the spirit before richer flavours develop across the palate.
Soft molasses and toasted oak are joined by grape sweetness, dried orchard fruit, spice and subtle nutty notes. The ex-Pineau des Charentes cask contributes a delicate wine-like sweetness, adding another layer to the rum without overwhelming its underlying aged character.
The finish is long and smooth, with honeyed fruit, oak spice, vanilla and dried grape lingering on the palate. The expression also reflects the connection between BaBin’s fourth-generation French distilling heritage and its Dunedin home, using French cask influence to create a distinctive aged New Zealand rum.
