A 57% navy strength New Zealand gin from The Vicar’s Son, distilled with New Zealand saffron, pink peppercorns and rosemary flowers for an intense combination of fruit, spice and floral character.
The Holy Spirit Navy Strength Gin is a powerful small-batch expression from The Vicar’s Son, created to showcase the character of saffron at a higher 57% ABV. Despite its navy strength, the distillery describes the gin as exceptionally smooth, with an intense concentration of botanicals and a full mouthfeel.
The saffron is sourced from Kiwi Saffron in New Zealand’s deep south and is distilled directly alongside the other botanicals, leaving the finished gin perfectly clear. Pink peppercorns, rosemary flowers and Macedonian juniper contribute additional layers of fruit, spice, floral character and classic gin structure.
On the nose, juniper is joined by honey, berries, spice and subtle floral notes. The palate develops with fruit and spice from pink peppercorns, supported by juniper and the nectar-like character of rosemary flowers before a distinctive burst of saffron leads into an exceptionally long finish.
Production begins with a barley-based fermentation followed by four distillations and 20 vapour-infusion extraction cycles. The finished spirit is diluted with Antipodes water to 57% ABV. Production is exceptionally limited, with just nine bottles made per batch.
