A 45.5% New Zealand rum matured through a solera system in American and French oak wine casks, with orchard fruit, maple sweetness, candied sugar and warming spice.

Last Light Solera Aged Rum is a New Zealand-made rum matured using fractional blending through a traditional solera system. This method allows younger and older batches of rum to mature and blend together progressively, helping create a balanced and consistent character across releases.

The solera is arranged in tiers, or nurseries, with the youngest rum held in the upper tier and the oldest in the bottom. Rum for bottling is drawn only from the oldest nursery, which is then replenished from the tier above. This process continues through the system, with new-make rum eventually introduced into the youngest nursery.

Maturation takes place in a combination of American and French oak casks that previously held New Zealand red and white wines. These seasoned wine barrels contribute additional complexity while allowing oak, fruit, sweetness and spice to integrate throughout the solera maturation process.

The rum opens with apple and pear-drop aromas alongside honey, maple syrup and warming spices. The palate develops with sweet candied and burnt sugar, followed by soft liquorice, cinnamon and nutmeg. Oak brings a gentle vanilla character before a lingering, spicy and drying finish.

Tasting Notes/Botanicals Used Aromas of cinnamon, brown sugar, maple syrup, stewed apple and orchard fruit lead into candied and burnt sugar, soft liquorice, cinnamon and nutmeg on the palate. Oak adds gentle vanilla notes, followed by a medium-length, drying finish with lingering spice.
