An undiluted and unfiltered New Zealand cask strength rum bottled directly from Last Light’s solera at 55.2% ABV, delivering concentrated fruit, caramelised sugar, oak, vanilla and spice.
Last Light Cask Strength Solera Aged Rum captures the Auckland rum maker’s solera-aged spirit at the alcoholic strength it reaches when drawn from the final nursery. Bottled at 55.2% ABV, no water is added before bottling, allowing the character developed through distillation and maturation to remain concentrated.
The rum is also non-chill filtered, preserving naturally occurring flavour compounds that contribute to its complexity and texture. Last Light describes the expression as an opportunity to experience its rum much as the makers do directly from the solera — undiluted and unfiltered.
Produced from blackstrap molasses, the wash undergoes a 144-hour fermentation using Caribbean and Tropical yeast strains before being pot and column distilled. Maturation takes place through Last Light’s solera system using both American and French oak.
Its flavour profile moves from autumn fruit, red apple, cinnamon and maple syrup into concentrated candied sweetness and caramelised brown sugar. Dry oak and light vanilla emerge through the richer flavours before leading into a spicy, drying finish.
