A full-bodied New Zealand cask strength rum made entirely through pot distillation and matured in first-fill American and French oak wine hogsheads, with rich brown sugar, nuts, fruit and warming spice.
Last Light Cask Strength 100% Pot Still Rum is a bold expression designed to showcase the heavier, fuller flavours retained through traditional pot distillation. Unlike Last Light’s spirits that move from a stripping run to a column still, this expression undergoes its second distillation entirely in the pot still.
The rum begins with a blackstrap molasses wash fermented for 144 hours using White Star D497 Caribbean and D022 Tropical yeasts. It is then 100% pot distilled, allowing more of the heavier flavour compounds to remain in the new-make spirit and creating a richer, more full-bodied style.
Maturation takes place in first-fill American and French oak wine hogsheads. Bottled at cask strength at 56% ABV, the resulting rum combines rich sweetness, nuts, baked fruit and warming spice with a thick texture and pronounced oak character.
Rum maker Jonathon Price developed his distilling skills using a homemade still built from a 50-litre beer keg before eventually constructing a larger pot still from a 1,000-litre stainless-steel IBC. This hands-on approach remains part of Last Light’s distinctive New Zealand rum-making story.
